Raxi Maxi’s Pumpkin Soup
To make Raxi Maxi's Pumpkin Soup you will need:
• 1 pumpkin
• 1 large carrot
• 1 large onion
• 1 teaspoon nutmeg
• Salt & pepper
• 3-4 cups chicken stock
• ½ cup sour cream & fresh herbs
Preheat oven to 180 degrees. Remove top inch of pumpkin with stem (this is the lid). Place whole pumpkin in a baking dish and bake until tender (45-60 minutes). Scoop out the seeds, then the cooked pulp of the pumpkin. Fry carrot and onion, until soft, to this add the pumpkin pulp, nutmeg, chicken stock, salt and pepper. Simmer for 20 mins. Allow to cool before pureeing. Return soup to pot, heat through and then spoon into the pumpkin shell. Add a swirl of sour cream and fresh herbs from your garden. YUMMY!
 

Make a Jack-o'-lantern Pumpkin Head!
Make Your Very Own Spooky Jack-o'-lantern Pumpkin Head!

You will need;

• 1 pumpkin
• An adult to help you.

Cut a lid at the top of the pumpkin around the stalk. Scoop out the seeds and stringy bits with a big spoon. Then draw a scary face on the front of the pumpkin and ask an adult to help carve out the face of your Jack-o-‘lantern.

Light up the inside of your Jack-o’-lantern with a small candle, turn out the lights and WICKED! You have now made your very own Spooky Jack-o'-lantern Pumpkin Head!
